The thing is that the printshop owner is unable to look into your mind.
So colors may still come out differently than you envisioned them.
RGB and CMYK can really differ, and it will affect the atmosphere of your artwork for instance.

To add another dimension and trouble your prints will also differ on different quality of paper. For example is the paper thick enough not to bleed, or is the paper slightly yellowish etc. So the colour profile that the printer gives will and should factor in all these factors.
In addition to this there is final hurdle of where your print is actually kept for display, is the light yellowish in the room, is there a bright spotlight on it or are you viewing them in somewhat diffused lighting conditions ![]()
