When I create a new document in Krita, it lets me choose from a list of template:
My question is: how to save my own document as a template so it shows in this list?
To answer your headline: Sure, it is in Krita’s menus under File → Create Template From Current Image.
This allows you creating own categories in the File → New-Dialog your screenshot shows, but you can drop your new created templates of course also in existing categories. Additionally, you can add own icons to your templates, if you like
