Everytime I export something and post it, the quality comes out so bad
Youtube community tab and instagram are the places i post
I use dpi of 300 but i don’t know the best canvas sizes that doesn’t make my art crunchy.

the dpi will not affect online quality – that’s for printing purposes. Each platform will compress your image in its own way. You can’t control that.
What you can do to improve the end result is stay in the 8-bit sRGB color model and crop your images to match the suggested dimensions and ratios for each platform. Also, it’s said that reducing the file size before uploading will minimize the “playing around” that each platform does with our images.
EDIT: Here’s the most recent article I could find re Instagram sizes. YouTube dimensions will be quite different from Instagram.

Only pixels matter. Dpi is just an agreement with the printer density. If pixel size is bad nothing can help.
I usually export images like this for socials:
I have found that if I use a better resolution (more pixels) the image looks awful on instagram. That’s because if instagram detects a large size/resolution it will compress the image really badly.
