It really depends on which operating system you use. If you’re on Windows, use the Wacom software settings that @kacart suggested.
If you’re on Linux, you can use xsetwacom commands to set the pen buttons or tablet buttons.
Do you mean a keyboard key or a tablet key/button?
You can assign a particular keyboard key combination to any brush preset by use of the
Tools → Scripts → Ten Brushes scripts and those Ten Brushes key combinations can be changed in the Settings → Configure Krita → Keyboard Shortcuts section under Scripts → Ten Brushes.
For a tablet button, you have to configure it to send a particular key combination, as noted in replies above.
1* under Keyboard Shortcuts - Painting there is an option Set Erasing Mode, the ability to toggle erasing on/off.
I put this on a button (Ä), if you press it you can erase and if you press it again you can paint again. But an eraser is specified there, I don’t know which one and I don’t know how to use a different eraser there.
2* And is there a way to hold down the button while erasing and when you let go you go back to paint mode with the brush you used before?
At the moment you always have to press 2 times
3* I mean both keyboard button and tablet button, you MUST use keystroke in the WACOM settings, you can’t assign a function to the pen button directly from the program in Krita.

Select Eraser Mode does not select an eraser. It forces the current brush preset to paint with Erase blending mode.
Using the ‘/’ shortcut, you can switch between current preset and previous preset.
That is a quick way to swap between any two presets for rapid painting-erasing.

So now the other question? You have to click…then he erases…then click again…then he paints again.

It’s a toggle action, as you’ve noticed.
I believe that would be possible by writing a special plug-in using Python and interacting with the krita Python API.
